Without water
Colour: Apple juice
Nose: Strawberry jam, mango coulis drizzled around vanilla cheesecake. Raisin Danish pastry, pecan pie with a chocolate-coated base, dulce de leche ice cream. Struck matches, rubber balloons, plus party hats made from paper, card and feathers, and starched lace doilies.
Palate: Soft mouthfeel that fills your palate with coal smoke. Gives way to rubber tyres and burnt strawberry jam in an aluminium pan. Opens up to vanilla cheesecake, chocolate hazelnut bars and beeswax candles.
Finish: Gentle smoke puffs and vintage plastic candleholders with birthday cake on the spikes.
With water
Nose: Edinburgh rock, gentle smoke from a wood fire in an old pub with polished horse brasses hanging from the fireplace, a wicker basket with oak logs to the side. Hops, oatcakes, Victoria sponge cake with vanilla essence. Tinned peaches and tangerine segments, coconut ice and mango pudding.
Palate: Wood smoke, apple crumble with a burnt top, crème brûlée, crème caramel, slightly bunt Victoria sponge cake with a thick vanilla buttercream and strawberry jam filling. Semi-melted chocolate buttons and rich hazelnut and chocolate spread on buttery brioche.
Finish: Water reveals larger smoke puffs and hazelnuts.
